Crow & Moss x Eva Masaki: Gujō Tōgarashi Bar

Eva Masaki  collaborates with Michigan-based chocolatier Crow & Moss to create Gujō Tōgarashi Chocolate, blending 69% single-origin Wampusirpi cacao from Honduras with chili peppers grown on Shibano Farm in Gujō, Japan near Eva's former alpine village of Takasu. Dairy and gluten free.

With sharp heat and bright citrus layered over notes of toasted nuts and roasted banana, the bar evokes the Japanese hearth in winter. Crow & Moss—led by professional baker and chocolatier Mike Davies and family—operates a workshop (the "chocolatery") in Petoskey, Michigan. Davies worked closely with Eva to harmonize this distinctive pairing.

This second collaboration with Crow and Moss celebrates another deeply personal connection to Japan: Gujō, a mountain city in Gifu Prefecture where she lived after university. Packaging colorways draw inspiration from Takasu, recalling the warmth and traditional practices of its people. Each bar carries Eva's ancestral hanko stamp printed in tonal plum.
